Which egg would you eat?

I am a tightwad, but I willingly buy the hens high quality, organic food even when I cringe at the price. Just try to find eggs like these to buy. We gave up and raise them ourselves. You could too, just about anywhere in America these days. If you live in an HOA that forbids chickens, that right there is reason enough to put up the for-sale sign. Or get on the board and change the rules-backyard chickens are easier and cleaner than dogs. Quieter too, if you don’t keep a rooster. And they eat garbage, like the unpuffed cream puffs that failed I gave them today. Why failed pastries, you ask? Because of the crappy store-bought eggs. And a bad recipe on the internet. But mostly the eggs, especially the meringue that would not, no would not, whip. Five eggs down the drain before I gave up on making those cookies before spring.

I wanted to go out to breakfast so someone else would do the dishes, but alas, the options are few on a Sunday in rural Utah. R made me pancakes. I did the dishes. The girls laid another egg today, but one of them stepped on it. The Jersey Giants we retained as layers are too big and clumsy for the current nest boxes. Time to bust out the saw and make some sawdust so I can have an omelet some Sunday soon.
